We had a Great New Years Eve, I was in bed at 10;30PM, Oh Well, I have seen a lot of midnights and do like my sleep!

I got up early and prepared a nice 8 pound Prime Rib for our New Years Dinner ! The big kettle on the stove is not for cooking, the humidity in the apartment is only 25% so we boil salt water and try to raise the Humidity up to 45 to 50% so our skin is not so dry!

I trimmed some fat, rubbed the boneless prime road down with some fresh garlic and salt and pepper and sprayed it with Butter Pam to get a good crusty seared cover.

Final touch is fresh store bought green onions on the top and ready to cook at 450 degrees for 35 minutes, then turn heat down to 350 degrees and cook for 1 hour and 15 minutes for medium rare.

All Done, 1 perfect Prime Rib, and it was delicious.

We used to cook 4 lobsters, couple pounds of Shrimp and have this on New Years Eve but this year we went for Prime Rib !

We are getting hammered with SNOW and sub zero Temps, I mean 35 below zero, I have a hard time breathing in this cold sub zero weather !

I have to wear a Mask to avoid the Cold air on my lungs !

We had to go out, it was a Blizzard out there, hard to see and temperature was 12 below zero !!! COLD!

Anna Mae looks good, the meal sounds good everything good 'cept that danged cold. I an an aversion to it. Sorry you will not make Florida this year. Hope to see you guys next year. We have friend in Okee again. maybe we can buy you guys a steak down there if we get a chance to meet.
